Every now and then, a recipe comes along that genuinely changes your perspective on cooking, especially when it comes to plant-based eating. For me, discovering the incredible versatility of cashews in savory dishes was one such revelation. I’ve seen cashews used in everything from milk to cheesecakes, but it’s their ability to create a smooth, luscious cream for savory applications that truly captured my imagination.

Inspired by the ingenious use of cashews, I’m thrilled to bring you this Vegan Creamy Mushroom and Kale Pasta. It’s designed to be a standout addition to your weekly dinner rotation – easy enough for a busy weeknight, yet impressive enough for a weekend gathering. The blend of earthy mushrooms, nutrient-dense kale, and that unforgettable cashew cream creates a symphony of flavors and textures that will satisfy even the most discerning palate.

My main inspiration for the cashew cream technique comes from this fantastic article from Pinch of Yum, demonstrating just how adaptable and incredible a simple cashew-based sauce can be. I’ve taken that foundation and built a complete, hearty meal around it, and I genuinely can’t wait for you to experience its deliciousness!

Unlocking the Flavor: Key Ingredients for This Vegan Creamy Mushroom Pasta Dish

Crafting this rich and flavorful vegan pasta dish relies on a few core ingredients, each playing a crucial role in delivering its creamy texture and satisfying taste. Here’s a closer look at what you’ll need and why each component is essential:

  • Cashews: These are the cornerstone of our dairy-free cream sauce. When properly soaked and blended, raw cashews create an incredibly smooth, neutral-flavored base that’s surprisingly rich and velvety. They are the secret to achieving that luscious texture without any dairy.
  • Garlic: You can never have too much garlic in a savory pasta sauce! Fresh garlic cloves, blended into the cashew cream and sautéed with the vegetables, provide a pungent, aromatic foundation that elevates the entire dish. Its robust flavor pairs perfectly with mushrooms and kale.
  • Vegetable Broth: Using vegetable broth instead of water in the cashew cream adds an extra layer of savory depth and umami. It helps thin the sauce to the perfect consistency while infusing it with more flavor. You can opt for water if preferred, but broth is highly recommended for a richer taste.
  • Nutritional Yeast: This unique ingredient is a vegan kitchen staple, renowned for imparting a distinctly “cheesy” flavor. It’s an inactive yeast that offers a nutty, umami kick to our cashew cream, making it taste even more indulgent and dairy-like. Plus, it’s often fortified with B vitamins!
  • Red Pepper Flakes: For those who enjoy a little warmth and kick in their pasta, red pepper flakes are a fantastic addition. They provide a subtle heat that complements the rich sauce without overpowering other flavors. They are entirely optional, so feel free to adjust to your preference or omit them.
  • Rosemary Sprigs: Fresh rosemary adds an aromatic, earthy, and slightly piney note that beautifully enhances the overall herb profile of the pasta. It infuses the sauce with its distinctive fragrance and makes the dish feel incredibly gourmet. If using dried, remember to use a smaller amount.
  • Pasta Water: Often overlooked, the starchy water leftover from cooking your pasta is liquid gold for sauces! It helps to emulsify the sauce, creating a silkier, more cohesive texture that clings perfectly to the pasta. Don’t forget to reserve a cup before draining!
  • Chopped Kale: This superfood adds a vibrant pop of green, a slightly bitter edge that balances the richness of the sauce, and a generous boost of nutrients. Kale wilts down beautifully, integrating seamlessly into the dish. Feel free to use curly or Lacinato (dinosaur) kale.
  • Portobello Mushrooms: Portobello mushrooms are chosen for their robust, earthy flavor and wonderfully meaty texture. When sautéed, they release delicious juices that further enrich the sauce. You can also use cremini, button, or mixed wild mushrooms for varied flavor.
  • Olive Oil: Essential for sautéing the mushrooms and kale, olive oil provides a foundational flavor and helps cook the vegetables until tender and lightly browned, enhancing their natural sweetness.
  • Farfalle Pasta / Bow Pasta: While I have a personal affection for farfalle (bow tie pasta) because it catches the sauce so well, this recipe is incredibly forgiving when it comes to pasta shapes. Feel free to use your favorite – penne, fettuccine, rotini, or even spaghetti would be delicious! For a gluten-free meal, simply opt for your preferred gluten-free pasta variety.

The magic of cashews ensures this pasta is so incredibly creamy that absolutely no one will guess it’s completely dairy-free!

Looking for a Low-Carb Option for this Creamy Vegan Mushroom Pasta?

For those following a keto diet or simply looking to reduce their carbohydrate intake, this creamy vegan mushroom and kale dish can be easily adapted to fit your dietary needs. The robust flavors of the cashew cream, mushrooms, and kale pair exceptionally well with zucchini noodles, often referred to as “zoodles.”

Swapping traditional pasta for zoodles not only dramatically cuts down on carbs but also provides a generous serving of fresh vegetables, boosting the nutritional value of your meal. The tender-crisp texture of zucchini noodles offers a delightful contrast to the rich, creamy sauce, ensuring a satisfying and guilt-free experience that aligns perfectly with a KETO diet. You can also consider cauliflower rice or spaghetti squash as other excellent low-carb alternatives.

This Vegan Kale and Mushroom Pasta recipe is the perfect dinner option for those who are totally obsessed with pasta! It is so creamy and flavorful, and tastes even better the next day!

Prep: 30 mins

Cook: 20 mins

Total: 1 hr

Servings: 8 people

Equipment

  • Food blender or processor
  • A large skillet

Ingredients

Cashew Cream & Pasta

  • 1.5 cup cashews, soaked for 2-4 hours
  • 4 cloves garlic
  • 2 cups vegetable broth
  • 2 tbsp nutritional yeast
  • 1 tsp red pepper flakes
  • 2 rosemary sprigs
  • 1 cup pasta water
  • 3 cups chopped kale
  • 4 large portobello mushrooms
  • 2 tbsp olive oil
  • 1 lbs uncooked farfalle pasta or bow pasta
  • Salt and pepper to taste

Instructions

  1. To Soak the Cashews: Place the raw cashews in a large bowl or cup and cover completely with fresh water. Let them soak for a minimum of 2 hours, or up to 4 hours, to soften them thoroughly. After soaking, drain the cashews and rinse them well under cold water.
  2. Prepare the Cashew Cream: Transfer the drained and rinsed cashews to a high-speed blender. Add the 2 cups of vegetable broth, the 4 cloves of garlic, and season with salt and pepper to taste. Blend on high until the mixture is incredibly smooth and creamy, with no visible cashew pieces. This may take 2-3 minutes, scraping down the sides as needed. Set the cashew cream aside.
  3. Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add your farfalle (or preferred pasta) and cook according to the package directions until al dente. Before draining the pasta, carefully scoop out and reserve one cup of the starchy pasta water. This will be used later to adjust the sauce consistency. Drain the pasta immediately, but do NOT rinse it under cold water, as the starch on the pasta helps the sauce adhere.
  4. Sauté Vegetables and Combine: While the pasta is cooking, heat the olive oil in a large skillet or Dutch oven over medium heat. Add the sliced portobello mushrooms and sauté, stirring frequently, for about 5 minutes until they begin to soften and release their moisture. Next, add the chopped kale to the skillet and cook for another 5 minutes, or until the kale has wilted and become tender. Pour in the prepared cashew cream, add the rosemary sprigs and red pepper flakes, and adjust seasoning with salt and pepper. Stir continuously until the sauce gently simmers.
  5. Finish the Dish: Remove the skillet from the heat. Add the drained pasta directly into the sauce. Gently fold the pasta into the creamy sauce, ensuring every strand is coated. If the sauce appears too thick, slowly add the reserved pasta water, a tablespoon at a time, while continuing to fold, until your desired creamy consistency is achieved.
  6. Serve: Dish out generous portions of the creamy vegan mushroom and kale pasta while warm. For an extra touch, garnish with additional red chili flakes, a drizzle of truffle oil, or a light sprinkle of nutritional yeast for an even cheesier finish. Enjoy immediately!
