Banana Bread Christmas Crack Recipe: Sweet Holiday Snack

Banana Bread Christmas Crack combines leftover banana bread with a buttery brown sugar toffee, melted milk chocolate, toasted walnuts, and flaky sea salt. The result is chilled until it snaps — crunchy on top, chewy underneath. I made this with leftover slices from my brown butter banana bread loaf and it quickly became one of my favorite holiday treats. The concept was inspired by thefoodarrondissement; I adjusted notes and timing so it works with a denser banana bread. Details are in the recipe below.

Let’s Chit Chat About This Recipe

If it’s your first time making this, note that warm banana bread can affect caramel set. My slices were cool and the usual five-minute bake left the caramel slightly underdone. Look for bubbling across the entire surface — not just the center. For thicker or cool slices that may take 8–10 minutes. When baked correctly the layers fuse and the texture — snap on top and chewy inside — is unforgettable.

Ingredients

Ingredients for banana bread Christmas crack including Tony's Chocolonely, brown sugar, butter, walnuts, and banana bread.
  • Banana bread, thinly sliced. Homemade is best; store-bought works. Chill before slicing for cleaner cuts.
  • Butter, 142 g (about 10 tbsp).
  • Light brown sugar, 150 g (3/4 cup packed). Light brown gives a balanced caramel flavor.
  • Tony’s Chocolonely milk chocolate caramel sea salt bar, 180 g, broken into chunks. The toffee pieces in this bar are excellent; substitute milk chocolate plus toffee bits if needed.
  • Dark chocolate chips, 1/3 cup. Adds small pockets of deeper chocolate.
  • Toasted walnuts, 1/3 cup, chopped. Toasting brings out flavor and gives crunch.
  • Flaky sea salt for finishing.

How to Make Banana Bread Christmas Crack

  1. Preheat the oven to 180°C (350°F). Line a large baking tray with parchment and arrange thin banana bread slices in a single layer, covering as much surface as possible.
  2. In a saucepan over low–medium heat, combine the butter and brown sugar. Stir until the butter melts, then bring to a gentle simmer. Cook 6–8 minutes, stirring frequently, until the caramel is thick and amber.
  3. Pour the hot caramel evenly over the banana bread and spread it with an offset spatula so each slice is coated.
  4. Bake 8–10 minutes, watching for bubbling across the entire surface — not just the center. If the slices were cool, it may take the full time for the caramel to set properly.
  5. Remove from the oven and immediately scatter the broken chocolate bar and dark chocolate chips over the hot caramel. Let sit 2–3 minutes until the chocolate begins to soften, then spread it into an even layer.
  6. Sprinkle with toasted walnuts and finish with flaky sea salt while the chocolate is still soft.
  7. Cool at room temperature for about 10 minutes, then transfer to the fridge for at least 2 hours to set. Break into pieces and serve cold for the best snap.

Tips so your caramel doesn’t split

  • Use low to medium heat. High heat can cause the butter to separate from the sugar.
  • Stir gently and consistently until the butter is fully incorporated, then let the mixture simmer with occasional stirring until it thickens.
  • Don’t walk away — the window between perfect caramel and a broken caramel is small.

If it does split

Remove the pan from heat, add 1–2 tablespoons of hot water, and whisk vigorously until the caramel comes back together. Return to low heat for a minute to finish.

How to Store It

Store in an airtight container in the fridge for up to a week, or freeze for up to a month. If stacking pieces, separate layers with parchment paper.

Banana Bread Christmas Crack FAQs

Can I use store-bought banana bread?

Yes — slice it thinly and proceed as directed.

Why isn’t my caramel bubbling all over?

It likely needs more bake time. Keep it in the oven until the entire tray is actively bubbling, up to 10 minutes.

Does the banana bread get soggy?

The bread will soften where the caramel soaks in, creating a chewy, caramelized interior. Chilling firms the pieces up so you still get a satisfying snap on top.

Can I make it ahead?

Yes. It keeps well in the fridge for a week and in the freezer for up to a month, making it ideal for make-ahead treats or edible gifts.
